Chicken Curry with White Rice

  • 2 tablespoons coconut oil, divided in two
  • 1 chicken breast, boneless, skinless and diced
  • 2 cloves garlic, chopped
  • 1/8 onions, chopped
  • 2 tablespoons yellow curry powder
  • 1 cup coconut milk
  • 1/2 cups coconut cream
  • 1 pinch salt and pepper
  • 1 cup basmati rice, white, to accompany
  • fresh cilantro, for garnish

  • In a skillet, add a bit of coconut oil and sear the chicken, cooking until the cubes are golden brown.
  • In a separate pan, cook the onion and garlic with a bit more coconut oil, add the curry, coconut milk, coconut cream, and let it reduce for 10 minutes. Incorporate the chicken and season with salt and pepper.
  • Serve hot, accompany with basmati white rice and garnish with fresh cilantro. Enjoy.
