Chicken in Blueberry Sauce

Try this delicious chicken in blueberry sauce, mango, árbol chili, and a touch of Strongbow® Red Berries. This sauce is delightful because it will have a spicy yet sweet touch thanks to the fruit and Strongbow® Red Berries.

  • 1/4 cups olive oil, to seal the chicken
  • 4 chicken breasts, in halves, boneless
  • 2 tablespoons olive oil, to make the sauce
  • 2 cloves garlic
  • 2 cups cranberries, fresh
  • 1 cup mango, in medium cubes
  • 1/4 cups raw sugar
  • 5 árbol chiles, seedless
  • 1/2 cups Strongbow® red berries
  • 1/2 cups chicken bullion
  • salt
  • pepper
  • 1/2 cups cranberries
  • 1 stick cinnamon
  • wild rice, recommendation for pairing
  • 1 Strongbow® red berries, for pairing

  • Heat the oil in a skillet over medium heat and cook the chicken for 10 minutes or until browned on both sides. Remove and set aside.
  • Pour more olive oil into the same skillet and cook the garlic, blueberries, mango, and árbol chili over medium heat for 2 minutes, then add the brown sugar, Strongbow® Red Berries, chicken broth, and let cook over medium heat for 10 more minutes. Remove the blueberry sauce from the heat and let cool for 5 minutes.
  • Blend the blueberries with the mango, árbol chili, sugar, Strongbow® Red Berries, broth, salt, and pepper for 5 minutes until you obtain a smooth sauce.
  • Return the chicken to the skillet and pour the sauce over it, add the blueberries, cinnamon, and cover. Cook over medium heat for 20 minutes or until the breast is fully cooked. If you notice there’s not enough liquid, add a bit of chicken broth.
  • Serve the chicken in blueberry sauce on a plate and drizzle with the cooking sauce. You can accompany it with wild rice to taste and pair with Strongbow® Red Berries.
