Chicken in Green Pipián

Green pipián is a typical Mexican sauce made from pumpkin seeds, also known as pepita, green tomato, and chili. This sauce pairs very well with birds like chicken.

4 chicken breasts
200 grams pumpkin seeds, (shelled pumpkin seeds)
50 grams peanuts, peeled
1 kilo tomatillo
1/4 onions, chopped
2 cloves garlic
1 leaf lettuce
1 leaf radish, chopped
2 tablespoons vegetable oil
1 cup fresh cilantro, chopped
1/2 liters chicken broth
4 serrano chiles

In a pot with water and a bit of onion, boil the chicken breasts until well cooked, approx. 30 minutes.
Remove the chicken breasts from the water and place on a plate while preparing the pipián.
Bring 4 cups of water to a boil in a large pot. Add the serrano chiles and cook for 10 minutes.
Then add the tomatoes and cook for 5 minutes or until they change color.
Remove the chiles and tomatoes from the water and place them in a food processor.
Add to the processor the onion, garlic, lettuce, radish leaves, and cilantro and process. Place on a plate.
Now in the food processor, grind the pumpkin seeds and peanuts until you obtain a very fine flour.
In a large skillet with a bit of oil, fry the seed flour and peanuts for 2-3 minutes, stirring constantly.
Add the green tomato mixture and 2 cups of chicken broth to the skillet and bring the mixture to a boil, cover, and cook for 10 minutes.
Add the chicken breasts and cook for 10 more minutes.
