Chicken in Mango and Habanero Sauce

  • 1 tablespoon garlic, finely chopped
  • 1/4 cups orange juice, natural
  • 1 cup Aires De Campo® organic chamomile blossom honey
  • 1 cup Aires De Campo® organic mango and Habanero chile dressing
  • Aires De Campo® salt
  • pepper
  • 4 Aires De Campo® organic chicken thigh
  • 4 Aires De Campo® organic chicken legs
  • 1 cup new potatoes, in halves
  • 1 cup baby carrot
  • 1 cup broccoli, in florets
  • 1 cup cauliflower, in florets
  • Aires De Campo® salt
  • pepper
  • thyme
  • bay
  • radish, for garnish

  • Preheat the oven to 200°C.
  • For the mango sauce, in a pot, heat Aires de Campo® Organic Coconut Oil and cook the garlic for a couple of minutes; add the natural orange juice, Aires de Campo® Organic Chamomile Honey, Aires de Campo® Organic Mango and Habanero Dressing, Aires de Campo® Salt, and pepper. Cook until it thickens.
  • On a baking tray, place the Organic Aires de Campo® Chicken Thighs and Legs along with the vegetables. Season with Aires de Campo® Salt, pepper, thyme, bay leaf, and brush with a little of the sauce. Bake until the chicken is cooked and the vegetables are shiny, about 40 minutes. You can brush with the sauce during cooking for extra shine.
  • Serve with fresh thyme and radish.
