Chicken in Poblano Pepper Cream

  • 5 Poblano chiles, roasted, deveined and seedless
  • 1/2 sticks cream cheese
  • 1/2 cups sour cream
  • 1 sprig fresh cilantro
  • 1/4 onions
  • 1 clove garlic
  • 1/2 cups chicken broth
  • 2 tablespoons vegetable oil
  • 1/2 onions, sliced
  • 1 chicken breast, cooked and shredded
  • 1 cup corn kernels

  • For the sauce, blend the poblano pepper with the cream cheese, cream, cilantro, onion, garlic, and chicken broth. Set aside.
  • Heat the oil over medium heat, fry the onion for 5 minutes, add the chicken, corn kernels, the sauce, season with salt, and cook for 10 minutes.
  • Serve, accompanied by tortillas.
