Chicken in Spicy Cilantro and Lettuce Sauce

  • 1 tablespoon vegetable oil
  • 2 chicken breasts, boneless and skinless
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 tablespoon butter
  • 1/8 onions, finely chopped
  • 1 clove garlic
  • 2 serrano chiles
  • 2 cups fresh cilantro
  • 2 cups lettuce, Trio Eva ®
  • 1 cup whipping cream
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 serrano chile, sliced for garnish
  • 1 sprig fresh cilantro, for garnish

  • In a skillet over high heat, heat the oil, season the breasts with salt and pepper, and sear on both sides until golden brown. Remove and set aside.
  • In a deep skillet, melt the butter and cook the onion and garlic. Add the chili and cook for one minute.
  • Add the cilantro and Trio Eva® lettuce and cook on low heat until the lettuce releases all its liquid, about 5 minutes.
  • Blend the previous mixture with the heavy cream until you obtain a smooth sauce.
  • Return the sauce to the skillet, place the chicken breasts, and season. Cook on low heat and covered for 20 minutes or until the breasts are fully cooked.
  • Serve the chicken breasts and garnish with sliced chili and fresh cilantro.
