Chicken Medallions with Nuts

  • 1 clove garlic, for the sauce
  • 1 cup whipping cream, for the sauce
  • 1 1/2 cups milk, for the sauce
  • 1/2 cups apricot jam, for the sauce
  • 2 tablespoons chipotle chile in adobo sauce, for the sauce
  • 1 teaspoon cornstarch, for the sauce
  • 3 tablespoons butter, in cubes, for the sauce

  • 1/2 cups goat cheese, for the filling
  • 1 cup Granut Mix® Mix Natural
  • 1 tablespoon garlic powder, for the filling
  • 1 tablespoon paprika, for the filling
  • 1 tablespoon chives, finely chopped, for the filling

  • 5 chicken breasts, in large and thick fillets

  • For the sauce, blend the garlic together with heavy cream, milk, apricot jam, chipotle pepper, and cornstarch until fully integrated.
  • In a pot with melted butter, pour the previous mixture, season with salt and pepper, and cook for 6 minutes over medium-low heat. Keep warm.
  • For the filling, in a bowl, mix the goat cheese with Granut Mix® Natural, garlic powder, paprika, scallions, salt, and pepper.
  • Preheat the oven to 200 °C.
  • Place a chicken fillet on a flat surface, add the filling in the center, and roll it up, being careful not to break the piece of chicken. Place the chicken piece on a sheet of aluminum foil, drizzle a little olive oil, and roll it up again, tightening the formed chicken cylinder. Repeat until all the chicken breasts are done and place everything on a baking tray.
  • Bake the chicken for 20 minutes at 200 °C. Once cooked, slice the chicken pieces.
  • Serve a ladle of apricot sauce on an individual plate, place the chicken medallions on top, and decorate with scallions. Accompany with a green salad.
