Chicken Pastor Tacos

If you love pastor tacos, you will really enjoy this recipe. They are made with chicken and pastor sauce based on Del Fuerte® Natural Tomato Puree, perfect to accompany with grilled pineapple, onion, and cilantro. Ideal if you don’t love or can’t eat pork.

  • 2 cloves garlic
  • 4 cloves
  • 1 teaspoon cumin
  • 3 black pepper
  • 1 cup Del Fuerte® natural tomato purée
  • 10 guajillo chiles, grilled, deveined, and seedless, soaked in hot water
  • 2 ancho chiles, grilled, deveined, and seedless, soaked in hot water
  • 1/4 onions
  • 1 cup pineapple juice
  • 1/2 cups achiote, 110 g
  • 1/4 cups apple cider vinegar
  • 1 kilo chicken breast, cut into long strips
  • 1 pinch salt
  • 1/2 kilos corn tortillas
  • 1/2 red onions, finely chopped
  • 1 bunch fresh cilantro, finely chopped
  • 1 cup pineapple, in slices for decoration

  • Grill the garlic with skin, onion, clove, cumin, and pepper on a low flame for 3-5 minutes without burning them, so they release some aroma. Once grilled, remove from the grill, peel the garlic, and set aside.
  • Blend the ingredients that were cooked on the grill, the chiles, add the Del Fuerte® Natural Tomato Puree, pineapple juice, achiote, apple cider vinegar, and season to taste.
  • Add the chicken strips to a deep bowl and marinate with the sauce for 1 hour.
  • Heat a skillet over high heat with a little oil and fry the marinated chicken strips until cooked. Once cooked, remove from heat and they are ready to serve in tacos.
  • Heat the tortillas, add the chicken strips on top, pineapple slices, and add some onion and cilantro to accompany.
