  • 4 chicken breasts
  • 8 tablespoons flour
  • 6 tablespoons unsalted butter
  • 5 tablespoons olive oil
  • 1/3 cups lime juice
  • 1/2 cups chicken broth
  • 1/4 cups capers
  • 1/3 cups fresh parsley, chopped

  • Season the breasts with salt and pepper and then dredge them in the flour.
  • In a large skillet over medium heat, melt 4 tablespoons of butter and the olive oil. When the butter begins to bubble, add the chicken breasts and cook for 3 minutes on each side, remove from the skillet and place on a plate.
  • In the skillet with the butter, add the lemon juice, capers, and chicken broth. Cook until it starts to boil.
  • Place the breasts in the sauce and cook for 5 minutes. Remove from the sauce and place on a serving platter.
  • Add the remaining 2 tablespoons of butter to the sauce and whisk well, allowing the sauce to cook for another 2-3 minutes.
  • Pour the sauce over the breasts and serve.
