Chicken Skewers

A very tasty recipe that your whole family will love. Chicken skewers have my special marinade!

  • 4 chicken breasts, boneless and skinless
  • 1 red bell pepper, cut into cubes
  • 1/2 cups balsamic vinegar
  • 1 tablespoon onion, chopped
  • 1 tablespoon brown sugar
  • 1/2 onions, in cubes
  • 2 tablespoons vegetable oil
  • 2 cloves garlic
  • 1 tablespoon black pepper
  • 1/2 tablespoons curry powder
  • 1/2 cups tomato juice

  • Cut each chicken breast into strips (about 3-4 per breast).
  • In a large bowl, combine the vinegar and the rest of the ingredients, cover, and shake.
  • Add the chicken to the marinade, cover, and marinate in the refrigerator for 1 hour.
  • Remove from the refrigerator and place in a pot and bring to a boil.
  • On skewers, alternate the chicken, onion, and bell pepper.
  • Grill the skewers for about 10 minutes.
  • Baste each skewer 1-2 times during grilling with the marinade.
