Chicken Skewers with Garlic and Lemon

These skewers are a healthy, balanced option and are also very easy to make; the flavor is delicious, and you can make combinations of vegetables as you like.

  • 1 cup cilantro, finely chopped
  • 1 tablespoon garlic, finely chopped

  • 3 cups chicken, cut into cubes for skewers
  • 1 red onion, cut into large squares for skewers
  • 1 green bell pepper, cut into large squares for skewers
  • 1 yellow bell pepper, cut into large squares for skewers

  • Mix in a bowl the sea salt, lemon juice and zest, cilantro, and garlic; drizzle in the Nutrioli® vegetable oil while simultaneously incorporating with a whisk or fork. Set aside.
  • Form the skewers with the sticks using the chicken and vegetables, and brush with the vinaigrette you prepared earlier; you can let them rest in the oil for 10 minutes to allow the flavors to meld.
  • Heat a skillet or grill to high temperature, place the skewers, sear for 5 seconds on both sides, and lower the temperature to finish cooking them.
  • Serve the skewers accompanied by a salad, lemons, and enjoy.
