Chicken Skewers with Peanut Sauce

The chicken yakitori skewers are marinated in an oriental sauce and served with a peanut sauce.

  • 1 kilo chicken breast, in strips
  • 6 tablespoons sherry
  • 4 tablespoons sugar
  • 1/2 cups soy sauce
  • 4 tablespoons vegetable oil
  • 1/4 cups chives, chopped
  • 1/2 cups peanut butter
  • 1/4 cups chicken broth, heat
  • 3 tablespoons soy sauce
  • 1 1/2 tablespoons brown sugar
  • 1 tablespoon fresh ginger, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon garlic
  • 1 tablespoon red chile

  • Combine in a deep bowl the sherry, sugar, 1/2 cup soy sauce, oil, and chopped green onions. Add the chicken and let it marinate for 15 minutes.
  • Heat a grill to medium temperature and prepare the skewers using wooden sticks, placing 3-4 strips per skewer.
  • Cook each skewer for about 4-5 minutes on each side until the chicken is fully cooked.
  • Prepare the peanut sauce by combining peanut butter, chicken broth, soy sauce, brown sugar, ginger, lime juice, minced garlic, and red chili in a blender and blend for 2 minutes.
  • Serve the skewers accompanied by the peanut sauce.
