Chicken Strips with Tamarind Sauce

  • 800 grams chicken breast, skinless and boneless
  • 200 grams potato chips
  • 3 eggs
  • 1/2 cups wheat flour
  • 1/2 liters canola oil
  • black pepper
  • coarse salt
  • 100 milliliters tamarind concentrate
  • 10 milliliters Tabasco sauce
  • 1 pinch black pepper

  • Prepare your Weber® grill for medium direct heat (350º - 450ºF or 175º - 232ºC).
  • Crush the bag of potato chips until you get flakes and set aside. Cut the chicken breasts into strips that are not too thin.
  • In a bowl, beat the eggs and add a little salt and pepper. Bread the chicken strips following these steps: coat in flour, then in egg, and finally in the potato chip flakes. Repeat until all the chicken strips are breaded and set aside.
  • In a skillet, place the tamarind concentrate, a pinch of pepper, the hot sauce, and bring to a boil for 5 minutes, stirring constantly. Remove from heat and set aside.
  • Place the Weber® Wok over medium direct heat on your grill and preheat for 2 minutes, carefully add the oil, and once hot, place the chicken strips to fry for about 10 minutes or until the internal temperature reaches 175ºF or 79ºC.
  • Drain the excess oil on a paper towel or napkin.
  • To serve, coat the chicken strips with tamarind sauce to taste.
