Chicken with Fruit and Olives

A very tasty chicken recipe with a sauce made from dried fruits and green olives.

  • 6 chicken, thigh and leg
  • 1/4 cups red vinegar
  • 3 tablespoons olive oil
  • 1/2 tablespoons salt
  • 1/4 tablespoons pepper
  • 4 cloves garlic
  • 1/2 cups seedless prune
  • 1/2 cups dried apricots, boneless
  • 1/2 cups pitted olives, boneless
  • 1 cup white wine
  • 1/2 cups fresh parsley, chopped

  • In a deep bowl, mix the vinegar, olive oil, salt, pepper, and garlic. Add the fruits, olives, and chicken, cover, and marinate in the refrigerator for at least 5 hours or preferably overnight.
  • Preheat the oven to 220 degrees Celsius. Pour the white wine over the chicken and let it marinate at room temperature for 15 minutes.
  • Place the chicken in a rectangular baking dish and bake for 35 minutes or until the chicken is fully cooked. Remove from the oven and let it cool for 10 minutes.
  • Add the parsley, cover, and refrigerate for at least 2 hours.
  • Remove from the refrigerator and remove the chicken from the bones (discard the bones). Mix the chicken with the fruit mixture and let it sit for 10 minutes.
  • Serve cold.
