In a deep bowl, mix the vinegar, olive oil, salt, pepper, and garlic. Add the fruits, olives, and chicken, cover, and marinate in the refrigerator for at least 5 hours or preferably overnight.
Preheat the oven to 220 degrees Celsius. Pour the white wine over the chicken and let it marinate at room temperature for 15 minutes.
Place the chicken in a rectangular baking dish and bake for 35 minutes or until the chicken is fully cooked. Remove from the oven and let it cool for 10 minutes.
Add the parsley, cover, and refrigerate for at least 2 hours.
Remove from the refrigerator and remove the chicken from the bones (discard the bones). Mix the chicken with the fruit mixture and let it sit for 10 minutes.
Serve cold.
