Chicken with Ginger and Rice

1 cube chicken broth
3/4 cups water, hot
1 cup long grain rice, (jasmine or Thai rice)
600 grams chicken thigh, boneless and cut into cubes
1 ginger, peeled and cut into julienne
3 cups spinach
1 cup unsweetened coconut milk
cups kosher salt, to taste

In a bowl, dissolve the chicken broth cube in the hot water.
In a pot for making rice, add the rice, chicken, and ginger.
Arrange the spinach at the top. Pour in the coconut milk and the hot water with the dissolved chicken broth cube.
Season with salt.
Start the cooking and wait approximately 40 minutes. Wait 5 minutes before opening.
With a fork, separate the mixture and serve in individual plates.
