Chicken with Ginger and Rice

Recipe for chicken slightly spiced by ginger and a touch of rice that pairs spectacularly.

  • 1 cube chicken broth
  • 3/4 cups water, hot
  • 1 cup long grain rice, (jasmine or Thai rice)
  • 600 grams chicken thigh, boneless and cut into cubes
  • 1 ginger, peeled and cut into julienne
  • 3 cups spinach
  • 1 cup unsweetened coconut milk
  • cups kosher salt, to taste

  • In a bowl, dissolve the chicken broth cube in the hot water.
  • In a pot for making rice, add the rice, chicken, and ginger.
  • Arrange the spinach at the top. Pour in the coconut milk and the hot water with the dissolved chicken broth cube.
  • Season with salt.
  • Start the cooking and wait approximately 40 minutes. Wait 5 minutes before opening.
  • With a fork, separate the mixture and serve in individual plates.
