Heat a cast iron skillet, add the oil and then the chicken. Cover and cook for 8 minutes. Remove and set aside.
Add the other tablespoon of oil and fry the garlic, bell peppers, and Freshly Whole Mushroom by Eva®. Cook for 5 minutes.
Add the crushed tomatoes and then gradually add the cream, stirring constantly to prevent the sauce from curdling. Add the chicken broth and season with salt and pepper. Cook the sauce for 15 minutes.
Return the chicken to the skillet, coat it with the sauce, and cook for 10 more minutes.
Serve in the same skillet and garnish with basil. Pair with fusilli pasta with butter.
