Chicken with Rice

  • 3 tablespoons olive oil
  • 1 chicken, skinless, cut into pieces
  • salt
  • pepper
  • 1/4 cups onion, sliced
  • 1 tablespoon garlic, finely chopped
  • 2 cups rice, for paella
  • 1 red bell pepper, in julienne
  • 1 carrot, in small cubes
  • 1 tomato, poached and chopped
  • 1 envelope seasoning, for paella
  • 3 1/2 cups water
  • 1 cup peas
  • parsley, for decoration

  • In a pot, heat the olive oil and sear the chicken pieces on both sides until golden brown, season with salt and pepper. Remove and set aside.
  • In the same pan, cook the onion until transparent, add the garlic and rice, fry until golden. Add the bell pepper, carrot, and cook for 5 minutes.
  • Add the tomato and cook for 1 minute, incorporate the paella seasoning, pour in the water and add the peas. Let it come to a boil, return the chicken pieces, cover, and cook on low heat for 30 minutes or until the rice and chicken are cooked, stirring halfway through cooking.
  • When cooked, remove from heat and let rest for 15 minutes. Serve and garnish with fresh parsley.
