Ingredients: 3 tablespoons olive oil; 1 chicken, skinless, cut into pieces; salt; pepper; 1/4 cups onion, sliced; 1 tablespoon garlic, finely chopped; 2 cups rice, for paella; 1 red bell pepper, in julienne; 1 carrot, in small cubes; 1 tomato, poached and chopped; 1 envelope seasoning, for paella; 3 1/2 cups water; 1 cup peas; parsley, for decoration

In a pot, heat the olive oil and sear the chicken pieces on both sides until golden brown, season with salt and pepper. Remove and set aside. In the same pan, cook the onion until transparent, add the garlic and rice, fry until golden. Add the bell pepper, carrot, and cook for 5 minutes.
