Achiote Roasted Chicken or Red Recado

1 kilo chicken drumstick, and thighs
achiote
1 garlic
1/2 tablespoons oregano
2 chicken bullion, in cubes
salt
200 grams pasta shell
500 grams mixed vegetables
1 cucumber
1 banana

Toast the chicken directly over the fire in the pan. Once it is blackened, wash it with lemon and then cook it in a pot with water.
Roast a garlic and add it to the chicken cooking. You can add chicken broth, oregano, and salt to taste. Cook the chicken for 40 minutes.
Once the chicken is cooked, marinate it with achiote, sour orange, and salt. Bake the chicken at 180° C for 15 minutes to brown it.
Once the chicken is roasted, serve it with pasta soup (made with the chicken broth) and a salad of tomato, cucumber, fried plantain, and lettuce.
