Achiote Roasted Chicken or Red Recado

A delicious recipe that is very traditional in Yucatecan cuisine. Achiote gives the chicken a unique flavor.

  • 1 kilo chicken drumstick, and thighs
  • achiote
  • 1 garlic
  • 1/2 tablespoons oregano
  • 2 chicken bullion, in cubes
  • salt
  • 200 grams pasta shell
  • 500 grams mixed vegetables
  • 1 cucumber
  • 1 banana
  • water
  • 1 lime

  • Toast the chicken directly over the fire in the pan. Once it is blackened, wash it with lemon and then cook it in a pot with water.
  • Roast a garlic and add it to the chicken cooking. You can add chicken broth, oregano, and salt to taste. Cook the chicken for 40 minutes.
  • Once the chicken is cooked, marinate it with achiote, sour orange, and salt. Bake the chicken at 180° C for 15 minutes to brown it.
  • Once the chicken is roasted, serve it with pasta soup (made with the chicken broth) and a salad of tomato, cucumber, fried plantain, and lettuce.
