Breaded Chicken Toasts, Avocado, and Brie Cheese

  • 4 chicken cutlets, without flattening
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1/2 cups flour
  • 2 eggs
  • 1 cup granola, with Kellogg’s® quinoa
  • 4 tostadas, baked
  • 12 slices Brie cheese
  • 1 avocado, in slices
  • 4 tablespoons olive oil
  • 1 teaspoon coarse salt
  • 1 tablespoon parsley, chopped

  • Preheat the oven to 200° C.
  • Season the chicken cutlets with salt and pepper.
  • In three containers, place the flour, beaten egg, and Kellogg’s® quinoa granola. Bread each cutlet by first dipping it in flour, then in egg (removing the excess), and finally in the granola.
  • Bake for 15 minutes or until the chicken is cooked through.
  • Place 3 slices of brie cheese on each toast, one chicken cutlet, and three slices of avocado.
  • Add a tablespoon of olive oil and coarse salt. Decorate with parsley leaves.
