Chicken Nuggets Lunch with Quinoa

  • 1 boneless chicken breast
  • 1 tablespoon mustard
  • 100 grams quinoa
  • 500 milliliters water
  • 1 clove garlic
  • 1 egg, (beaten) for breading
  • 6 cherry tomatoes
  • 1/2 pears

  • Preheat the oven to 200° C.
  • Boil the water and add the garlic clove. When it is boiling, add the quinoa. Cook for 20 minutes over medium heat.
  • Cut the raw chicken and place it in a processor.
  • Add a tablespoon of mustard, salt, and pepper to the chicken to taste.
  • Mix well and shape into nuggets.
  • Dip each nugget in the beaten egg and then in the quinoa.
  • Bake for 20 minutes.
