Chicken Nuggets with Quinoa

This idea is perfect for kids; they are breaded nuggets made with quinoa and baked. Quinoa contains omega 3, which helps improve hyperactivity in children.

  • 2 cups water, for the quinoa
  • 1 pinch salt, for the quinoa
  • 1 cup quinoa, washed
  • 1 tablespoon oregano, dehydrated, for breading
  • 2 chicken breasts
  • 2 pinches salt
  • 1 pinch pepper
  • 1 cup flour, for breading
  • 3 eggs, for breading

  • Preheat the oven to 200°C.
  • In a pot, heat the water until it boils. Add salt and quinoa, cook on low heat covered until cooked and the liquid has been absorbed. Let it rest for 5 minutes before uncovering. Mix in the oregano and set aside.
  • Season the chicken breast cubes with salt and pepper.
  • Place flour, beaten egg, and quinoa with oregano in three bowls.
  • Bread the chicken by passing it through flour, egg, and quinoa, and place on a baking tray.
  • Bake for 15 to 20 minutes, flipping to brown evenly. Serve.
