Butterfly Chicken with Honey and Lemon

  • 1 chicken, without giblets
  • 2 tablespoons olive oil
  • 1 1/5 liters water
  • 1/4 cups coarse salt, for the rub
  • 1 1/2 tablespoons ground black pepper, for the rub
  • 12 cloves garlic, finely chopped, for the rub
  • 2 tablespoons fresh rosemary, finely chopped, for the rub
  • 2 tablespoons oregano powder, for the rub
  • 2 tablespoons fresh thyme, for the rub
  • 6 tablespoons olive oil, for the marinade
  • 7 cloves garlic, finely chopped, for the marinade
  • 2 lime juice, for the marinade
  • 1/3 cups honey
  • 3 tablespoons apple cider vinegar

  • On a cutting board, place the chicken with the breast side down, make two cuts right next to the backbone, following the neck and tail. Remove the backbone and discard. Flip the chicken over and press down with your hands to open it and form a butterfly chicken.
  • Mix the rub ingredients and coat the chicken with this mixture. Place the chicken in a resealable bag with the water and let it sit in the refrigerator for at least 2 hours.
  • Prepare your Weber® grill for medium direct heat (350 - 450ºF or 175º - 232ºC). Soak 2 handfuls of Weber® applewood chips in water for 30 minutes before grilling.
  • Remove the chicken from the bag and pat it dry with a paper towel. Place the chips directly on the coals if using a charcoal grill, or in the Weber® smoker box if using a gas grill.
  • Brush the chicken with oil and place it on the grill over indirect medium heat for 60 – 70 minutes.
  • Mix the marinade ingredients, and once on the grill, brush the chicken with this mixture every 15 minutes until the internal temperature of the chicken reaches 170ºF or 77ºC.
  • Carefully remove the chicken from the grill and let it rest at room temperature for 5 minutes. Serve hot.
