Ingredients: 1 chicken, without giblets; 2 tablespoons olive oil; 1 1/5 liters water; 1/4 cups coarse salt, for the rub; 1 1/2 tablespoons ground black pepper, for the rub; 12 cloves garlic, finely chopped, for the rub; 2 tablespoons fresh rosemary, finely chopped, for the rub; 2 tablespoons oregano powder, for the rub; 2 tablespoons fresh thyme, for the rub; 6 tablespoons olive oil, for the marinade; 7 cloves garlic, finely chopped, for the marinade; 2 lime juice, for the marinade; 1/3 cups honey; 3 tablespoons apple cider vinegar

On a cutting board, place the chicken with the breast side down, make two cuts right next to the backbone, following the neck and tail. Remove the backbone and discard. Flip the chicken over and press down with your hands to "open" it and form a butterfly chicken. Mix the rub ingredients and coat the chicken with this mixture. Place the chicken in a resealable bag with the water and let it sit in the refrigerator for at least 2 hours.
