These avocados filled with a mixture of chicken, mozzarella cheese, and tomato, dressed with a mix of basil and oregano, are a great option for healthy eating. A very original way to enjoy this classic salad.
2 cloves Extra Special® mild garlic with fine herbs
1/4 cups basil, finely chopped
2 tablespoons oregano
1 teaspoon árbol chile sauce
1 teaspoon Great Value® plain salt
1/4 teaspoons pepper
1/2 cups Extra Special Olive Oil®
1 chicken breast, cooked and shredded
226 grams Mozzarella cheese, in balls
1 cup cherry tomato, cut in half
4 avocados
1 sprig basil, for garnish

For the vinaigrette, in a bowl, mash the garlic with the balsamic vinegar, basil, oregano, chili sauce, salt, and pepper. Emulsify with olive oil.
In another bowl, mix the chicken with the cheese and tomatoes. Add a bit of the vinaigrette and mix very well. Set aside.
Cut the avocados in half and remove the seed and skin. Fill with some of the chicken mixture and garnish with fresh basil, serving with more vinaigrette.
