For the vinaigrette, in a bowl, mash the garlic with the balsamic vinegar, basil, oregano, chili sauce, salt, and pepper. Emulsify with olive oil. In another bowl, mix the chicken with the cheese and tomatoes. Add a bit of the vinaigrette and mix very well. Set aside.
