  • 1 tablespoon vegetable oil, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 tomato, for the sauce, in quarters
  • 2 chipotle chiles, dry, for the sauce
  • 1/2 cups chicken broth, for the sauce
  • 1 sprig epazote, for the sauce
  • 1 cup pinto beans, cooked and with broth, for the sauce
  • 1/2 cups sour cream, for the sauce
  • 1 teaspoon salt, for the sauce
  • 1/2 teaspoons pepper, for the sauce
  • 1/4 teaspoons cumin, for the sauce
  • 4 chicken cutlets, flattened
  • 1 cup asadero cheese, in sticks
  • 2 tablespoons vegetable oil
  • sour cream, for decoration
  • avocado, in cubes
  • epazote, fried, for decoration

  • For the sauce, in a medium pot, heat the oil and sauté the onion, add the garlic, the tomato, the chiles, and cook for 10 minutes. Add the chicken broth and the epazote, cook for 5 more minutes and cool slightly.
  • Blend the previous preparation along with the beans, cream, salt, pepper, and cumin until you obtain a sauce.
  • On a board, season the chicken cutlets with salt and pepper. Place the cheese in the center of the cutlets and roll up, securing with toothpicks.
  • Heat a pan over medium heat with oil and fry the rolls until cooked.
  • Serve the sauce as a mirror on the plate, arrange the chicken rolls and garnish with cream, avocado, and epazote.
