Chicken and Sour Cream Enchiladas

  • 12.3 ounces chicken
  • 1 onion, sliced
  • 3 Jalapeño chiles, chopped and seeded
  • 1 clove garlic, peeled and mashed
  • 7 ounces FAGE® Total 0% greek style yogurt
  • 7 ounces sour cream, or fresh cream
  • 1 can cream of mushroom
  • 8 flour tortillas
  • 2.7 ounces cheddar cheese, grated
  • vegetable oil, for frying and seasonings

  • Sauté the onion, chiles, and add the garlic after 5 minutes.
  • Add the chicken pieces.
  • Simmer until the chicken is cooked, about 10 minutes.
  • Meanwhile, mix the FAGE® Total 0% Greek Style Yogurt, sour cream, and mushroom soup in a large bowl.
  • Add the mixture to the skillet and season.
  • Fill the burritos with the mixture and roll them up,
  • Pour the remaining filling, sprinkle with grated cheese, and place in the hot oven (400ºF) for 15 minutes, or until the cheese is browned.
  • Serve with a green salad or rice.
