Chicken and Vegetable Balls in Sweet and Sour Orange Sauce

  • 1/2 chicken breasts, cut into small cubes for the chicken balls
  • 1 cup Eva® California Bits, 454 grams
  • 1 teaspoon garlic, powder for the chicken balls
  • 2 tablespoons soy, for the chicken balls
  • 1 egg, for the chicken balls
  • salt, for the chicken balls
  • pepper, for the chicken balls
  • 1/4 cups cornstarch, for the chicken balls
  • 1/2 cups rice flour, for the chicken balls
  • 3 tablespoons olive oil, for the chicken balls
  • 2 tablespoons sesame oil, for the orange sauce
  • 1/4 onions, finely chopped for the orange sauce
  • 1 clove garlic, finely chopped for the orange sauce
  • 2 cups orange juice, for the orange sauce
  • 2 tablespoons soy sauce, for the orange sauce
  • 1/4 cups sugar, for the orange sauce
  • 1 tablespoon rice vinegar, for the orange sauce
  • 1 tablespoon orange zest, for the orange sauce
  • 2 tablespoons chile, Sriracha for the orange sauce
  • 1 tablespoon cornstarch, for the orange sauce
  • 1 tablespoon water, for the orange sauce (to dilute the cornstarch)

  • For the chicken balls, in a bowl mix the chicken breast, California Bits Eva®, garlic powder, soy sauce, egg, salt, and pepper until fully incorporated. Add cornstarch and rice flour until a dough-like texture is achieved. Using your hands, form balls until the mixture is finished. Set aside.
  • In a pan with oil, cook the chicken balls over low heat until fully browned. Cover and let cook for a few more minutes. Set aside.
  • For the sauce, in a pan heat sesame oil, add the onion and garlic and sauté. Add orange juice, soy sauce, sugar, rice vinegar, orange zest, Sriracha, and cornstarch diluted in water; let it cook over low heat until it thickens. Set aside.
  • In a deep plate, serve white rice, then add the California Bits Eva® chicken balls and drizzle with the sweet and sour sauce. Serve with sesame seeds and green onion tops.
