Chicken Breast al Ajillo

  • 2 cups olive oil
  • 4 tablespoons garlic, sliced thinly
  • 1 cup guajillo chile, sliced
  • 4 chicken breasts
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cups parsley, finely chopped, for garnish

  • For the ajillo, in a bowl mix the oil with the garlic, the guajillo chili, the chicken and marinate for 30 minutes. Reserve.
  • Heat a skillet over medium heat, add the chicken with the marinade and cook for about 15 minutes over medium heat or until the garlic is golden and the chicken is cooked. Season with salt and pepper. Serve and garnish with chopped parsley.
