Chicken Breast Filled with Nopales in Guajillo Sauce

Try this recipe for chicken breast filled with nopales and corn, accompanied by a little guajillo chili sauce. This dish is hearty and very complete for your whole family, as chicken is a great protein source and nopales are an excellent source of fiber and vitamins A, B, and B12.

  • 2 tablespoons vegetable oil
  • 1/4 cups onion, sliced
  • 1 tablespoon garlic, finely chopped
  • 1 guajillo chile, cut into strips
  • 2 cups nopal, cooked and cut into strips
  • 1/4 cups yellow corn kernels
  • 1 teaspoon oregano
  • 1 teaspoon Knorr® granulated chicken bouillon
  • 4 chicken cutlets, 150 g each
  • 2 tablespoons vegetable oil
  • 2 cups water, for the guajillo sauce
  • 3 tomatoes, for the guajillo sauce
  • 5 guajillo chiles, for the guajillo sauce
  • 1/4 onions, for the guajillo sauce
  • 1 clove garlic, for the guajillo sauce
  • 1 teaspoon Knorr® granulated chicken bouillon
  • zucchinis, with chayote, for accompaniment

  • In a skillet over medium heat, heat the oil, sauté the onion, garlic, guajillo chili, add the nopales, corn kernels, oregano, and add Knorr® Chicken Broth for seasoning. Let cool and set aside.
  • Fill the milanesas with the nopales, roll them up, and secure them with toothpicks.
  • In a skillet over medium heat, heat the oil and cook the chicken breasts for 10 minutes, or until cooked. Set aside.
  • For the guajillo sauce, boil the tomatoes with the guajillo chili, onion, garlic, and Knorr® Chicken Broth until dissolved. Let cool and set aside.
  • Blend the previous preparation and then cook it in a small pot over medium heat with oil, until it thickens.
  • On a plate, serve a mirror of sauce, the milanesa, and accompany with zucchini and chayotes.
