Chicken Casserole with Cheese

  • 1/4 cups butter, in cubes, for the sauce
  • 1/4 cups flour, for the sauce
  • 3 cups whole milk, for the sauce

  • 1 teaspoon nutmeg, for the sauce
  • 1 cup Manchego cheese, shredded, for the sauce
  • 3 tablespoons butter, in cubes, for the chicken breast
  • 800 grams chicken breast, skinless, boneless, halved

  • 2 cups broccoli, small pieces, pre-cooked
  • 1 cup Manchego cheese, shredded
  • parsley, finely chopped, for garnish

  • For the sauce: Melt the butter in a pot over medium heat, then add the flour all at once and cook until lightly browned, then pour in the milk, season with salt, pepper, nutmeg, garlic powder and cook for 10 minutes or until it thickens, stirring constantly. Add the shredded cheese and cook for 2 more minutes, stirring constantly. Remove from heat and set aside until use.
  • Preheat the oven to 180 °C.
  • Melt the butter in a grill pan over medium-high heat and then sear the breasts on both sides, seasoning with salt and pepper as you do. Once the breasts are seared, remove them from the heat and place them in a baking dish. Add the pre-cooked broccoli florets, pour the cheese sauce over it and cover with shredded manchego cheese. Bake at 180 °C for 20 minutes, to gratin.
  • Decorate the chicken casserole with cheese and parsley and serve on a plate, accompany with salad and enjoy.
