Chicken in Pomegranate Sauce

  • 1 cup flour, for the chicken

  • 1/2 teaspoons garlic powder, for the chicken
  • 4 half chicken breasts, skinless and boneless
  • 2 tablespoons Nutrioli® Anti-Drip Oil
  • 1 clove garlic, finely chopped
  • 1/4 cups onion, finely chopped
  • 1/2 cups pomegranate juice
  • 1/4 cups white wine
  • 2 sprigs fresh rosemary
  • 1/2 cups pomegranate, pomegranate seeds, for garnish

  • Place the flour on a flat plate and mix with salt, pepper, and garlic powder. Dredge the chicken on both sides and set aside.
  • Pour Nutrioli® Antigoteo oil into a cast iron skillet, heat over medium heat, and cook the garlic with the onion for 2 minutes.
  • Add the chicken and cook for 5 minutes on each side; brown it well, but do not finish cooking it. Then, add the cranberry juice, the white wine, and cook for 10 more minutes.
  • Serve the chicken in pomegranate sauce in the same skillet and garnish with pomegranate and fresh rosemary.
