Chicken Skewers on a Bed of Vegetables

Easy skewers are great for any day. In this recipe, we serve them on a bed of vegetables to make them healthy and delicious.

  • 2 chicken breasts
  • 1 red onion
  • salt
  • ground garlic
  • olive oil
  • chicken seasoning, lemon-pepper
  • 2 pumpkins
  • 1 red bell pepper
  • 1 can button mushrooms

  • Slice the chicken breast (into strips and then into cubes).
  • Cut the bell pepper into large cubes of approximately 2 x 2 cm and the zucchini into slices. Drain the water from the canned mushrooms.
  • Season the chicken breast with salt, garlic powder, and lemon-pepper seasoning.
  • Take a skewer and brush it with oil (this will prevent it from burning). Insert the chicken cubes until the skewer is filled, leaving a piece to hold. Sprinkle a little of the seasoning.
  • In a pan, add a little oil and cook the chicken until fully cooked, being careful not to overcook it so that the chicken remains juicy.
  • Sauté the vegetables until cooked.
