Chicken Strips with Peanut Sauce and Vegetables

  • 200 grams chicken breast, in fillets
  • 150 grams cauliflower
  • 50 grams leek
  • 2 carrots
  • 100 milliliters coconut milk
  • 4 tablespoons peanut butter
  • 1 clove garlic
  • 20 grams fresh ginger
  • 1/2 limes
  • 2 teaspoons olive oil
  • salt, to taste
  • pepper, to taste

  • Wash the chicken breast with cold water, dry it, and cut it into 1 cm strips.
  • Cut the cauliflower
  • Wash the leek and slice it
  • Peel the carrots and cut them into slices.
  • Heat 1 teaspoon of oil in a frying pan over medium heat.
  • Sauté the strips of meat and the vegetables for 2 minutes on each side. Remove the strips and set aside.
  • Add 150 ml of water to the vegetables and let simmer for 5 minutes or until the water evaporates.
  • Peel the garlic and ginger and cut them into thin pieces.
  • Squeeze the lime.
  • Heat 1 teaspoon of oil in a tall pot over medium heat
  • Add the chopped garlic, ginger, and chili to the pot and sauté for about 3 minutes.
  • Cover with coconut milk, bring to a boil, and remove from heat.
  • Add the peanut butter and lime juice and season with salt and pepper
  • Serve the strips of meat and the vegetables with the peanut sauce.
