Chicken Strips with Peanut Sauce and Vegetables

200 grams chicken breast, in fillets
150 grams cauliflower
50 grams leek
2 carrots
100 milliliters coconut milk
4 tablespoons peanut butter
1 clove garlic
20 grams fresh ginger
1/2 limes
2 teaspoons olive oil
salt, to taste
pepper, to taste

Wash the chicken breast with cold water, dry it, and cut it into 1 cm strips.
Cut the cauliflower
Wash the leek and slice it
Peel the carrots and cut them into slices.
Heat 1 teaspoon of oil in a frying pan over medium heat.
Sauté the strips of meat and the vegetables for 2 minutes on each side. Remove the strips and set aside.
Add 150 ml of water to the vegetables and let simmer for 5 minutes or until the water evaporates.
Peel the garlic and ginger and cut them into thin pieces.
Squeeze the lime.
Heat 1 teaspoon of oil in a tall pot over medium heat
Add the chopped garlic, ginger, and chili to the pot and sauté for about 3 minutes.
Cover with coconut milk, bring to a boil, and remove from heat.
Add the peanut butter and lime juice and season with salt and pepper
Serve the strips of meat and the vegetables with the peanut sauce.
