Cordon Blue in Walnut and Mushroom Sauce

The typical cordon blue recipe but with a delicious walnut and mushroom sauce twist.

  • 1 boneless chicken breast
  • 2 leaves spinach
  • 2 slices cheese
  • 2 slices deli ham
  • 1/2 cups walnuts
  • 1/2 cups button mushrooms
  • 2 tablespoons margarine
  • 1 cup whipping cream
  • 1/2 cups onion, diced
  • 2 teaspoons salt
  • 1 teaspoon sugar

  • For the cordon blue: We will take the chicken breast and cut it in half.
  • We will place a slice of ham, a slice of cheese, a spinach leaf, and a teaspoon of salt on each half. We will roll it up and secure it with toothpicks.
  • We will put our chicken breast in a pre-greased pan with 1 tablespoon of margarine (over medium heat) and cook until golden brown and no longer raw.
  • For the sauce: We will sauté the mushrooms along with the onion in a pan with 1 tablespoon of margarine until golden.
  • We will add the cream along with the walnuts and mix for 1 more minute.
  • Remove the pan from the heat.
