Cream Cheese and Spinach Stuffed Chicken Breasts

  • 2 tablespoons butter
  • 1/4 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 2 cups spinach
  • 1 package cream cheese, (190 g) cut into strips
  • 1 cup Oaxaca cheese, shredded
  • 3 pinches salt, use a pinch for the spinach
  • 3 pinches pepper, use a pinch for the spinach
  • 4 chicken breasts, boneless and skinless
  • 2 tablespoons vegetable oil

  • Preheat the oven to 180°C.
  • In a skillet, melt the butter over medium heat, add the onion and cook until transparent. Add the garlic and cook for one minute, stirring constantly, then add the spinach. Season and set aside.
  • Open the chicken breasts from one side and fill with spinach and cheeses. Close and secure with a toothpick. Season.
  • In a skillet, heat the oil over high heat. Sear the chicken breasts on both sides and place them on a baking tray. Finish cooking in the oven for 25 minutes. Serve.
