Creamy Herb Chicken Breasts

  • Season the chicken breasts with salt and pepper on both sides.
  • In a skillet over medium heat, melt the butter and olive oil. Increase the heat and sear the chicken breasts on both sides. Over medium heat, add the shallot and cook for two minutes, then flambé the chicken breasts with the white wine.
  • Add the herbs and chicken broth, cover, and cook on low heat for 20 minutes. Remove the chicken, and in the same skillet, add the heavy cream and the dissolved cornstarch. Cook until thickened, about 3 minutes, season, and sauce the chicken breasts. Serve.
