Curry Chicken Salad Sandwich

Curry is a very typical dish in Eastern or Indian cuisine; here we present a version that you will love. It is a delicious stew with chicken and coconut milk, served as a tasty sandwich. It’s the perfect alternative for a different and delicious meal.

  • 8 slices bread, Oroweat® Whole Wheat
  • 1 boneless chicken breast
  • 1/2 white onions
  • 1 tablespoon curry powder
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons vegetable oil
  • 1/4 cups coconut milk
  • 1/4 cups cranberries
  • 2 tablespoons basil
  • 2 sprigs thyme

  • Cut the chicken breast into small cubes.
  • Add the curry, salt, pepper, and coconut milk. Let marinate for 20 minutes, covered and in the refrigerator.
  • In a hot skillet, add the vegetable oil and cook the marinated chicken cubes. Add all the marinade for extra flavor.
  • Mix the chicken cubes with the cranberries, thyme, and finely chopped basil.
  • Place the filling on a slice of Oroweat® Whole Wheat Bread, top with another slice, and serve.
