Granola-Crusted Chicken Breast with Yogurt Dip

  • 2 cups Kellogg’S® granola ancestral grains; amaranth, flaxseed and blueberry
  • 1 chicken breast
  • 1/2 cups flour
  • 1 egg
  • 1 cup Greek yogurt
  • 2 cloves garlic
  • 1/2 cups onion
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 3 tablespoons vegetable oil
  • cooking spray

  • Preheat the oven to 180°C.
  • Slice the onion and sauté it in a hot pan with oil. Remove from heat when caramelized. Blend the yogurt with the caramelized onion, grated garlic, salt, and pepper. Pour into a container and set aside.
  • Season the chicken breast with salt and pepper, cut it in half, and coat it in flour, then in egg, and finally in Kellogg's® Ancient Grains Granola; amaranth, flaxseed, and blueberry.
  • Spray a little oil and bake at 180°C for 20 minutes.
  • Serve the granola-crusted chicken breast and accompany with the yogurt and onion dip.
