  • 6 chicken thighs, with skin
  • 1/4 cups Dijon mustard, for marinating
  • 2 tablespoons lime juice, for marinating
  • 2 tablespoons honey, for marinating
  • 1 tablespoon oregano, for marinating

  • 3 tablespoons Dijon mustard, for the sauce

  • In a baking dish, place the chicken thighs, spread the mustard, lemon juice, honey, oregano, and season with salt and pepper. Marinate for 1 hour in the refrigerator.
  • In a skillet over medium heat, heat the olive oil and cook the thighs for 5 minutes on each side. Add the sour cream, mustard, salt, pepper, and fresh thyme, and cook over medium heat for 30 minutes, uncovered.
