1 tablespoon vegetable oil, for the chicken breast
1 tablespoon butter, for the sauce
1/4 onions, finely chopped, for the sauce
1 clove garlic, finely chopped, for the sauce
1 tablespoon flour, for the sauce
2 cups cow's milk, for the sauce
2 tablespoons chipotle chile in adobo sauce, ground, for the sauce
salt, for the sauce
pepper, for the sauce
parsley, finely chopped, for garnish

For the chicken breast, on a cutting board, lay the bacon slices horizontally, place the chicken on top, and then the yellow cheese until covered; roll up and season with pepper. Set aside.
In a skillet with hot oil, place the breasts and brown the surface of the bacon completely; cover and cook for 15 minutes on low heat. Set aside.
For the sauce, in a small pot over medium heat, melt the butter, add the onion and sauté. Incorporate the garlic and flour, and cook until it turns a golden color. Pour in the milk and chipotle, season with salt and pepper, and let it thicken on low heat for a few more minutes. Set aside.
Cut the chicken in half. Pour a ladle of chipotle sauce onto a flat plate, place the chicken breast halves, and garnish with chopped parsley.
