Stuffed Chicken Breast with Guacamole Mayonnaise and Cheese

  • 1 cup cream cheese, for the filling
  • 1 cup McCormick® guacamole flavored mayonnaise, for the filling

  • 8 Mozzarella cheese, in sticks, for the filling
  • 2 slices deli ham, for the filling
  • 4 chicken breasts
  • 5 slices bacon, for wrapping
  • 2 tablespoons vegetable oil, for frying
  • 1 cup onion, for the pico de gallo
  • 1 cup tomato, for the pico de gallo
  • 1/4 cups serrano chile, for the pico de gallo
  • 4 tablespoons lime juice, for the pico de gallo
  • 1 teaspoon oregano, for the pico de gallo

  • For the filling: in a bowl, mix the cream cheese with McCormick® guacamole-flavored mayonnaise; season with salt and pepper. Set aside.
  • On a cutting board, place the bacon slices and on top, the chicken breasts. Add the ham and with the help of a spoon, the filling, then the mozzarella cheese sticks; wrap and close with toothpicks.
  • In a skillet over medium heat, add the oil and the chicken breasts. Cover and cook for 15 minutes.
  • For the pico de gallo: mix the onion, tomato, serrano chili, lime juice, oregano, salt, and pepper.
  • Slice the chicken breast and serve it accompanied by pico de gallo.
