The chicken cordon bleu empanadas are a famous dish of Swiss origin that consists of breaded chicken breast, filled with cheese and ham. We take this classic to another level and prepare these delicious cordon bleu empanadas.
Mix the ground chicken, onion, garlic, cilantro, salt, pepper, egg, and breadcrumbs in a bowl. Form a ball the size of your hand and using a tortilla press covered with plastic, flatten the ball. Fill with a slice of ham, a slice of cheese, and close to form an empanada. Repeat with the entire chicken mixture.
In a skillet with enough oil, fry the empanadas one by one for 10 minutes, covered, so they cook very well.
Serve on a plate or in a basket and accompany with avocado salsa.
