Mix the ground chicken, onion, garlic, cilantro, salt, pepper, egg, and breadcrumbs in a bowl. Form a ball the size of your hand and using a tortilla press covered with plastic, flatten the ball. Fill with a slice of ham, a slice of cheese, and close to form an empanada. Repeat with the entire chicken mixture. In a skillet with enough oil, fry the empanadas one by one for 10 minutes, covered, so they cook very well.
