Chicken Coxinha

A very traditional Brazilian recipe that works as a snack or lunch, ideal for watching Brazil's match in the World Cup. The coxinhas de frango (chicken in Portuguese) are made of flour and potato and filled with seasoned chopped chicken, tomatoes, and onions.

  • 1 kilo wheat flour
  • 4 potatoes, large
  • 2 chicken breasts
  • 4 tomatoes, without skin and chopped
  • 1 onion, finely chopped
  • 1/2 cups parsley, chopped
  • 1/2 cloves garlic, finely chopped
  • 2 eggs
  • 2 cups breadcrumbs
  • salt, and pepper to taste
  • vegetable oil, for frying
  • 2 sprigs celery

  • Cook the chicken breasts with the peeled potatoes, salt, celery, onion, and parsley.
  • When the potatoes are soft, mash (while hot) to make the dough.
  • Mix the potato with flour, add salt and pepper to taste, and chicken broth to knead.
  • Make small balls with pointed ends, shaped like pears, ready to be filled with chicken.
  • For the filling, sauté the onion and garlic until translucent, then add the tomato and cook until it dries out a bit.
  • Add the shredded chicken and season with salt and pepper.
  • Fill the pear-shaped dough with chicken and seal.
  • In a deep bowl, beat the eggs, and in another deep bowl, place the breadcrumbs.
  • Dip each ball first in the egg and then in the breadcrumbs.
  • Heat the vegetable oil in a skillet and fry the coxinhas until golden. Remove from the oil and drain on paper towels.
