Chicken in Guajillo Chile Sauce

  • 2 tablespoons vegetable oil
  • 6 guajillo chiles
  • 1/2 onions
  • 2 cloves garlic
  • 3 tomatoes
  • 1/2 teaspoons cumin, whole
  • 1/2 cups chicken broth
  • 2 tablespoons butter
  • 2 chicken breasts, boneless, skinless, and halved
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • guajillo chile, fried and julienned, for decoration
  • fresh cilantro, for decoration

  • In a pan, heat the oil and fry the guajillo chile, onion, garlic, tomato, and cumin. Add the chicken broth and let it reduce by half. Cool slightly.
  • Blend the previous preparation and strain if necessary.
  • In a deep skillet, melt the butter and sear the chicken until golden brown, add the sauce. Once it comes to a boil, cover and let cook for 15 minutes, season with salt and pepper.
  • Serve and decorate with fried guajillo chile, cilantro, and accompany with rice.
