Chicken in Mole

  • Remove the seeds from the chiles. Place them in a pot with enough water to cover and bring to a boil.
  • Once they are soft, turn off the heat and let cool. Place the cloves, pepper, oregano, cinnamon, cumin, chiles, a little vinegar, salt, pour in 1 1/2 cups of water, and blend until you obtain a fine mixture.
  • Place the pieces of chicken in a dish or pot and pour the sauce obtained over them.
  • Let it rest in the refrigerator for 3 hours.
  • Boil and add the bay leaves.
  • Serve hot.
