This chicken is a tradition in my family for Christmas dinner, it is a Spanish recipe, as my grandmother was a cook from there, it is very tasty. The chicken stays very juicy and is accompanied by mushrooms, peas, and baby potatoes. Prepare it!
Clean the chicken and remove the skin from the thighs and breasts, place in a large pot to melt the butter and add the chicken pieces; fry on low heat and cover for about 15 minutes.
On top of the chicken, add the parsley, sliced onion, ground pepper, bay leaves, baby potatoes, cover, and cook for another 15 to 20 minutes on low heat.
Finally, add the drained cans of mushrooms and peas, the can of pickled strips, and season. Stir to combine all the ingredients, cook for another 60 minutes until the chicken is very tender and juicy.
