Chicken in the Garden of San Marcos

  • 5 chicken drumsticks, and thigh
  • 4 potatoes
  • lard, sufficient amount
  • 1 onion
  • 1 clove garlic
  • 150 grams chorizo
  • 4 tomatoes, roasted
  • 250 milliliters chicken broth
  • 2 tablespoons vinegar
  • 1/2 sticks cinnamon
  • 1 clove
  • 2 pepper
  • 1/4 teaspoons oregano
  • 2 green onions
  • lettuce, sufficient amount
  • pickled chiles, sufficient amount

  • Cook the chicken in water with salt, garlic, and onion.
  • Blend the tomato with onion, vinegar, cinnamon, clove, pepper, and oregano, and marinate the already cooked chicken with the mixture.
  • Peel the potatoes and cut them into half-centimeter thick slices.
  • Boil the potatoes in salted water and fry them in lard.
  • Cut the chorizo into slices and fry them in their own fat.
  • Fry the previously marinated chicken in the lard.
  • Serve the chicken with the potatoes, chorizo, lettuce, and pickled chilies.
